Cardamom seeds - Essential oils with a distinctive aroma
In the jungles of India, this green wild cardamom is hand-picked. It is the light green seed pods of this plant, a relative of ginger, that contain the small black seeds with their distinctive aroma. Hand-picking is especially important, as the ripe seed pods can easily burst and lose their small, black, aromatic seeds.
These seeds contain the precious essential oils with that distinctive aroma.
Green wild cardamom has a lemony aroma with notes of camphor and eucalyptus. Ground, it belongs in curry blends such as garam masala. If you add whole pods to a dish or to rice, you can fish them out again at the end of cooking. Desserts, coffee, tea, confectionery and chocolate take on a wonderful aroma from cardamom. After saffron and vanilla, cardamom is among the most precious and expensive spices in the world.
Our tip: For a fresh, intense flavor, open the pods, remove the small seeds and grind them in a mortar.
